With proper spoke lengths and a truing stand, dishing gauges are unnecessary. To relieve stress and set the spokes, loosen the nipples 1/4 turn and with the axle on the ground, push down on the rim in various places worth hands at opposite ends of the rim. Flip and repeat. Them bring the spokes top tension and true it.
If you're building a track wheel, then it's even easier.
